Writing this book has been a fulfilling experience, culminating a journey of discovery which commenced when I started my experimentation with cooking as a young girl, and continued over many years since. For some, cooking is a chore that has to be gotten over with; on the other hand, it can be an intensely satisfying experience, calming as well as cathartic, joyous as well as exhilarating. A good meal brings a satisfaction that cannot be measured and brings a family, or a group of friends into a shared experience that leaves fond memories. Think back to your memories of your mother, or grandmother, or your favourite aunt and replay the smile on your face as you recall her famous kababs, or casserole, or badaam ka maisouk. That's the stuff memories are made of.This book is in response to my friends and family urging me to share my recipes with them. I have never considered myself to be a great cook, always doing just enough, or experimenting sufficiently with recipes found by me, to leave my guests with a satisfied feeling. But by providing these in a collated form, I feel that I am doing myself a favour: the weight of copying off scraps of paper compiled over a lifetime, fearful of loss, anxiety at my cook not following instructions precisely or even God forbid, losing them will no longer be there, Insha Allah. This is now in a form that all can share, and experience the same joy at seeing the smiles on the faces of their loved ones, as I have experienced on countless occasions over the years.They say that the way to a man's heart is through his stomach; in this emancipated era, let me assure you, it also applies to women. What we eat, the culinary experience, can dictate our moods; and I hope that if in a small way, I can contribute to the ease of others, then the compilation of this book will be as satisfying to me as the joy of preparing the meals themselves over the years.Cooking has always been a joy for me and the recipes presented in this book are traditional family fare, simple yet diverse cuisines, and as such cannot be classified under one heading. A lifetime of travel, different experiences in different countries, and a zest for finding new tastes has made this compilation possible. I have also experimented with the recipes here which often were found in other cookbooks, I hope that these recipes will continue to be enhanced and reconstructed, in turn, leading to more satisfying culinary experiences. Simplicity is the key to good cooking. No matter how good you are at creating different dishes from scratch, the humble Aloo Ghosht or Nahari simmered long under a tight-fitting lid before being laid on the family table will always give most pleasure when the lid is removed and the distinct aroma f1lters and the mouths start watering.But a final word of caution: do not confuse simplicity with mediocrity. The food can be simple, but pay attention to the basics and you will never go wrong. The quality of the meat, the time you take to cook it, its tenderness, the manner in which the onions you fry turn out to be "just right", a beautiful light golden brown and not black, and the masalas (spices) have also to be a certain temperature and fried to a rich red color. Get these basics wrong, and the smiles will soon turn to frowns !So never put off till tomorrow the good meal you can have today, enjoy the book, and may it give you as much pleasure as it gave me.
